You are right about java. Its a big security/privacy risk. I think its best to have java disabled or uninstalled. Maybe run Noscript addon to block it. I have never seen websites requiring java to order stuff. But some websites are using Flash which might do the same thing.

The reason the websites can see you are using windows server 2003 is because of user agent. Check for example http://whatsmyuseragent.com/ and you will see info about OS, browser etc. That information website can get also. Use firefox browser with addon like this...
