is it possible for a cashier to suspect something is wrong if i am using a gifht card plastic with a credit or debit card written to it, based on whether i have to hit cancel on the PIN part?

this is actually a pretty complicated question. a better one might be: what information is available to a cashier with a state of the art POS computer screen?

what exactly is the most information they can have regarding the cc / transaction?

well every POS terminal is different, but usually the info that a cashier can see are the following: total amount of purchase, type of payment method
not much, but for example in walmart, they can tell if youre using credit or debit, because beforehand you have to tell them which method you'll pay so the cashier can press the proper key credit/debit/gift card
they can also see error codes like the infamous 04

can they see the purchasers name? -a gift plastic should NOT have a name attached to it. so if they see a name that comes from the bank, that would be a red flag.

if you have to sign, would that be a red flag given that you are using gift card plastic? -you should not have to sign for a gift card correct?

Some banks issue credit gift cards with names. It shouldn't alarm unless they swipe card.

the pos can't see it, but the paper receipts usually will show the name
in this case i suggest to change the track 1 name to match the plastic gift card, or none at all just spaces
and yea youll have to sign for the card sometimes, again depending on the store
it's not likely that they'll check your card since in a lot of stores cashiers dont even touch the customer card, there's a terminal to swipe the card on.
